Healthy Lifestyle...

There are more people today choosing to take more responsibility for their own health and well-being.  This may include more exercise, reducing stress and eating more healthy.  By making a few small changes in one's lifestyle regards diet, fitness etc. can make a huge difference.  Over the months I aim to jot a few things down which I hope you may find of interest...we'll just see how things go, fingers crossed there may be something you like the sound of!

For starters did you know a healthy diet should include - foods high in complex carbohydrates and fibre - brown rice, whole-wheat pasta and wholegrain bread, also plenty of fresh fruit and vegetables...we also need to try and cut down on meats with a high content of saturated fat.  Easy for me to write, but cutting fatty foods out of my diet was one of the hardest things ever...just think butter, cream, bacon, sausage, black pudding...the list is endless!  Changing from full fat to semi-skimmed milk was heart breaking, my cornflakes just didn't taste the same...anyway over 25 years down the line here I am - converted.  I do lapse now and again and again, but there's nothing wrong with "chicken on wholemeal with sliced red onions and a rather large dollop of low fat tarragon mayonnaise...rather tasty I'd say!"

Here's one of my favourite recipes for your file...

Tarragon Mayonnaise
1/4 pint low fat mayonnaise
2 tsp tarragon white wine vinegar
2 tbsp fresh chopped tarragon
4 tbsp semi-skimmed milk (if needed)
 
Place the mayonnaise, chopped tarragon and tarragon vinegar in a glass or pot bowl and mix together with a wooden spoon.  Check consistency, if you prefer a thinner dressing add part if not all of the semi-skimmed milk - taste, season and serve.  Remember to store in an airtight container in the fridge if not using immediately - use within 2 days...for a quick easy lunch or supper serve a hot jacket potato laden with king prawns topped with handmade tarragon mayonnaise and a fresh green salad - scrummy!
